Africa Club are excited to bring you a virtual masterclass on a dish well loved across west Africa: Jollof rice.
This spicy, flavourful dish is a staple across west african countries and is easy to make in your own home.
Spice up your Monday evening by joining a few members of the Africa Club as we guide you through the process. Ingredients and equipment list can be found below:

Ingredients
1/3 cup vegetable oil (vegetable/canola/coconut, not olive oil)
2 x 400-gram tin of plum tomatoes
2 large red bell peppers, seeds discarded
2 medium-sized white onions, roughly chopped,
1/2 to 1 scotch bonnet
3 tablespoons tomato puree
2 teaspoons curry powder
1 teaspoon dried thyme
1-2 teaspoons ginger powder
2 dried bay leaves
5 to 6 cups stock (vegetable, chicken, or beef) or water, divided 4 cups uncooked long-grain rice, rinsed
4-5 Knorr cubes (chicken or vegetable)
Salt, to taste
white pepper, to taste
