Foodie Club is back teaming up with the culinary country of Portugal !

The Foodie Cooking Club is back with a cooking session hosted by Helena Cuoto (MiM 2021), bringing Portuguese cooking into your kitchens!
Looking to impress your in-laws, flatmates or your better half? Our cooking class has the answer! Join us to learn a seafood-based dish that is guaranteed to impress all of your loved ones. Over the course of this session, Helena will provide you with the tips and tricks to bring authentic Portuguese cooking into your kitchen!

What do you need to do?
     ✅ Sign up for the event
     🔪 Buy the required ingredients (see list below) if you want to cook along with Helena
     🖥️ Join us for an fun-filled and culinary session


Ingredients required:

  • Bottle of white wine
  • Lots of garlic (sliced)
  • Bunch of parsley
  • 1 onion (diced)
  • 1 red pepper (diced)
  • 400g short-grain rice, preferably Carolino (you can find it in Portuguese shops); alternative: risotto rice (such as Arborio)
  • Bunch of coriander
  • Salt & Pepper
  • Piri-piri sauce (or 1 red chilli)
  • If you're not making your own stock: seafood stock or seafood stock cubes
🦐 The essential good stuff
  • 500-700g fresh live clams with shells
  • 250g small-medium king prawns (RAW with shells)
  • 250g large king prawns (RAW with shells)

🦀 Optional (if you're a seafood lover and want to go all out)

  • 1 whole live crab (I always get it if possible, you can buy them for £12 whole)
  • 200g Mussels (only if you really want them)
  • Lobster

🥘 Equipment needed
  • Large, deep frying pan or a wide large saucepan
  • Large pan with lid (you can use the above if you only have 1)
  • Knife
  • Chopping board
  • Colander/sieve
  • Large bowl

2 options for this class regarding the stock

  1. Make your own stock before the class (recommended)
    Instructions by Helena here! [link to video] (adds 1h30-2h extra of cooking, 1h of which is passive - just simmering)
    • Ideally needs a blender
    • You must get all your seafood fresh and with shells on   
  2. Use store-bought seafood stock or stock cubes (not nearly as nice, but speeds up the dish)

Important: the class will start with the assumption that you've already simmered the stock or store-bought.
